Clay's Recipes

A number of folks have asked for various recipes from me at times. Problem is I can never remember to print them off, just before I see them again. Well in the generalized (but popular) hope that the web will solve everything, I thought I would give it a try here. These are all my creations, or heavily modified versions from other sources (many times mix and match). Oh yea, play around with the recipes, they are not sacred writings, and its not chemistry, its cooking! One more thing, I don't claim that anything is "authenic". Heck, I don't even claim the stuff tastes good, others have done that for me.

Cajun Blackened Steak

Great outdoor recipe. You could do it indoors if you have an vent hood on your stove the size of a NASA wind tunnel. I use one of those 170,000 btu burners you attached to a propane tank. Oh yea, it uses a cheep cut of beef!

Sweet Potato Chanterelle Soup

This will warm you up on a cold day also. This is a creamy soup with a tiny bite. It has a unique flavor that becomes exotic with the addition of saffron. This recipe can be made in advance, and finished just before service.

South Western Soup/Stew

This will warm you up on a cold day. It uses pork and chicken, but for the Beast Feast I have made it with venison and wild turkey. I guess you could use about any meats, but two different types adds character.

Golden Coins

Uses boneless pork ribs (yea I know). Great to take to parties. You would not believe what I've seen people use the sauce for... Worry not, with the sauce they are not spicy at all.

Curried Zucchini

This is the perfect thing to do with those giant, I've been on the vine way too long, zucchini. The more regular shaped they are the easier to dice.

Putineska

Great Italian dish. Works with chicken or shrimp. You could even make a vegetarian version of this one (if you are a wacko, I want to be like a prey animal, vegetarian).

Hot Wing Sauce

My attempt at reproducing a sauce from Frank's Clam Stand of Melbourne Fl. It may not be accurate, but it is good. It can be mild enough for the kids or hot enough..., well you know what I mean. Make a batch and freeze it and you can pick up a bucket of un-sauced wings on the way home from work and ta-da, you've got dinner.

Curry Spiced Candied Nuts

No its not like you think. You can barely identify the spice as curry. We gave these out one year for X-mas, they were a big hit!

Garlic Vinaigrette

A great salad dressing. Lori likes it on subs. I have never run into someone who didn't like it. You need to put it in a bottle that can be shaken and then poured immediately as this stuff separates quick, like oil and water (ha ha).

Mushroom Straws

Really good "finger food" for parties, can be made long in advance and frozen then finished (deep fried) latter. The final taste can be adjusted by the type of mushrooms you use. Our mushroom group (SVMS) went crazy for these.

Pepper Quiche Squares

Really good for parties, can be made in advance and reheated or eaten cold. What more could you want. This may sound really spicy but it is mild enough for kids.

Tyson's Corner Rolls

Cool rolled up things that are made with flat bread (lahvash). I have included a recipe for Aioli (garlic mayo) that goes well with these. I designed these based on a pita sandwich that Lori used to get from a deli when she worked in Tyson's Corner VA. She told me about it and first thing I thought of was these giant round flat breads that I have used as a pizza crust. Somehow when you combine avocado, alfalfa sprouts, bacon and cream cheese you get a flavor that is worlds better than it sounds (Must be like ketchup, peanut butter and Ritz). I would not have even tried this, except for my great trust in her ability to know good food (except SOS).

Oriental Meat Balls

Wonderful little bites of love. The flavor of black bean and garlic paste dominates the very rich flavor of the sauce (well more like a sticky coating). These are addictive and you may be asked to make this for all the parties you attend, forever, or until you get a whole new group of friends.

Mexican of the Woods Corn Bread

If you don't hunt mushrooms in the wild, you will probably not be able to get the main ingredient. You might be able to substitute cheese, cooked chicken or a strong mushroom. If made up as muffins, these are a great surprise for your guests. At least for those foolish enough to think you made deserts.

Cherry Tomato and Mushroom Bruschetta

These are stunningly colorful if you can get yellow cherry tomatoes! Otherwise they still taste great.

Oriental Cold Noodle Salad

Cool, slightly spicy (to me at least, others have said that they are quite spicey) , great for summer picknicks. Even better on the second day, and the third...
