Clay's Garlic Vinaigrette (Vinegarette)

Ingredients

• 3/4 cup Garlic vinegar *
• 1/2 cup Red Wine vinegar
• 2 oz Balsamic vinegar
• 2 oz Lemon juice
• 1 1/4 cup Olive oil
• 2 tbs Basil, Parsley
• 1 tsp Paprika, Oregano, Powdered Onion, Thyme
• 1/2 tsp Sage, Black pepper

Method

Grind or crush herbs. Mix every thing except oil. Add the oil slowly while mixing. - You will need to shake (or stir) well before service as the stuff always seems to separate, no matter how carefully you mix it.

(*) Garlic vinegar Using a gallon jug white cider vinegar, add 12-14 cloves of garlic that have been halved. Allow to stand for 2 weeks or more.
